Akira Corassani stuck in the airport: “Stuck at the airport in Copenhagen, a nice 2.5 hour delay. Taking a couple of deep breaths and laughing inside. Metal detector goes off as I’m passing through, an older man is searching me for possible threats to humanity. Thinking of buying an overpriced sandwich, it’s probably made with love, not! I can’t really decide if I should eat or not, don’t want to be full when that delicious high quality airplane food is served. It’s 2014 and the WiFi is playing Hide and Seek. I see a group of younger girls on their way to most likely a party trip. A couple of them will probably come back with alcohol intoxication and broken hearts. Went to a store acting as if I was interested in buying a perfume, grabbed one of the TEST bottles and sprayed myself nicely. Left without buying anything. So… I smell good, I’m hungry and excited for airplane food, the WiFi got better by my gate and I’m ready for take off! Thank you for sharing this moment with me, I truly wish I could continue with updates but my flight has no WiFi. Much love, off I go!”

Add cubed potatoes. Bring back to boil and reduce to simmer. Simmer until fork tender. Crack eggs in seperate bowl and place gently in sauce so they don’t fall to bottom.
